Food Protection Manager Exam Study Guide 2026 (PDF)
Updated October 2026 · Based on the FDA Food Code 2022 (the edition the exams follow) and the new 2026 edition
A 7-day system to pass your food protection manager exam on the first try. It turns the FDA Food Code into exam answers, then proves you know them with two full-length 90-question mock exams.
The problem
You get 90 questions, 2 hours, no notes, and a pass mark that ServSafe currently gives as 70% of the 80 questions that count (an older handbook says 75%). The FDA Food Code is free, but it runs to hundreds of pages, and the numbers that decide your result (155F or 165F, 2 hours or 6, 45F or 41F, 50 or 100 ppm) are spread across its chapters and annexes. Most study material either buries them in a textbook or lists them without the rule behind them.
What is inside
- How the exam works: ServSafe Manager and NRFSP formats, the passing score, proctoring, retakes, what to bring.
- Contamination and allergens: the Big 6, FAT TOM, TCS food, the Big 9 allergens and cross-contact.
- The food handler: handwashing, gloves, jewelry, reporting, exclusion and restriction.
- Receiving and storage: delivery temperatures, shellfish tags, storage order, date marking.
- Preparation and cooking: thawing, every cooking temperature, consumer advisories, parasite destruction.
- Holding, cooling and reheating: two-stage cooling, reheating rules, time as a public health control.
- HACCP and management: the 7 principles, active managerial control, variances, imminent health hazards.
- Cleaning and sanitizing: the three compartment sink, sanitizer concentrations, dish machines, thermometers.
- Facilities and pests: hand sinks, air gaps, backflow, pest control.
- The 60 numbers to memorize, each with its Food Code section.
- What changed in the 2026 Food Code, and what the exams still test.
- A 7-day study plan and exam-day checklist.
- Two full 90-question mock exams (180 questions), each with an answer key that explains every answer and cites the Food Code section.
- Bonus: 60 flashcards and a mistake tracker.
Who it is for
- Kitchen managers, chefs and owners who need their Certified Food Protection Manager certificate.
- Candidates for the ServSafe Manager exam or the NRFSP exam, online or in person.
- Anyone who failed once and wants to find their weak spots before paying for a retake.
- Managers renewing a certificate after 5 years, who must pass the exam again.
Who it is not for
- Food handlers who only need a food handler card: this guide covers the manager-level exam.
- Anyone looking for an official course or the exam itself: you still buy the exam from the certification program.
- Anyone looking for legal advice: this is an independent study resource, not affiliated with the National Restaurant Association, ServSafe, NRFSP or any health department. Your local code always has the final word.
